Christmas Slice

Christmas Slice

Leave some out for Santa!


  • 360 gram packet orange cake mix
  • ½ cup coconut
  • 2 eggs
  • 50 butter, melted
  • grated rind of one orange
  • 2 tblsp orange juice
  • 400 gram pottle Christmas Fruit Mince
  • icing sugar to dust


  1. In a mixing bowl blend together the cake mix, coconut, eggs, butter, orange rind and juice.
  2. Spread into a 20cm x 30cm greased and paper lined slice tin.
  3. Dot the Christmas fruit mince on top. Bake at 180°C for 35-40 minutes until cooked.
  4. Cool in the tin before cutting into slices to serve, dusted with icing sugar. Serve hot with cream as a dessert if wished or cold as a slice. Keep in an airtight container.
