Fresh Plum Sauce

Fresh Plum Sauce

Serve this sauce warm or cold with with barbecued meats or ham.


  • 1 small red onion, peeled and finely chopped
  • 1 red chilli, deseeded and chopped
  • 2 tsp minced fresh ginger
  • 1 tbsp oil
  • 850g Black Doris plums
  • ΒΌ cup water
  • 1 tbsp balsamic vinegar
  • about 2 tbsp brown sugar
  • 2 tbsp chopped fresh coriander


  1. Gently pan fry the onion, chilli and ginger in the oil until tender, but not brown.
  2. Cut the plums in half and discard the stones.
  3. Add the plums to the onion mixture, with the water, balsamic vinegar and brown sugar and simmer gently until tender.
  4. Mash the plums or pulse them in a food processor until the sauce is almost pureed, but still has some texture. Adjust sugar to taste and stir in the coriander. Serve warm or cold with barbecued meats or ham.
