Herbed Stuffed Chicken Thighs

Herbed Stuffed Chicken Thighs

Tasty chicken thighs dressed up for a barbeque


  • 8 boneless chicken thigh portions
  • ground black pepper
  • about 1 tblsp fresh rosemary leaves
  • 8 sundried tomatoes in oil
  • oil from the sundried tomatoes
  • juice 1 lemon


  1. Place the thigh portions smooth side down on the chopping board.
  2. Season each with pepper and a little rosemary. Place one sundried tomato on top.
  3. Fold over to enclose and secure each with two skewers.
  4. Place in a flat container, pour over the oil and lemon juice and season again with pepper. Cover and marinate for 30 minutes or overnight in the fridge.
  5. Cook on the barbecue, or grill under a high heat for about 15 minutes, turning until evenly cooked.
  6. Serve with your favourite summer salads.
