This cake is made with Mayonnaise making it dairy free cake.
Ingredients
- 1 cup dried apricots
- 2 tsp grated orange rind
- 1 cup orange juice
- 1 1/4 cups flour
- 1 tsp baking powder
- 1/2 cup desiccated coconut
- 1 cup mayonnaise
- 1 cup caster sugar
- 1 tsp vanilla essence
- 3 eggs
Method
- Chop the apricots roughly and place in a bowl with the orange rind. Heat the orange juice and pour over the apricots. Leave to cool.
- Sift flour and baking powder and add to apricot mixture with coconut.
- Beat mayonnaise, sugar, vanilla and eggs together in a small bowl. Add to apricot mixture and combine. Pour into a greased base-lined 20cm cake tin. Bake at 160 degrees C for 50 minutes to 1 hour or until a skewer inserted into cake centre comes out clean. Cool in tin for 10 minutes. Turn out onto a wire rack.
