This recipe creates something special from one of my favourite winter vegetables.
Ingredients
- tarragon butter (see Tarragon Baked Chicken recipe)
- 1 medium butternut, peeled and cut into 12x2 cm wedges
- 12 thick slices prosciutto
Method
- Spread the tarragon butter (see Tarragon Baked Chicken recipe) over the butternut. Wrap each wedge in a slice of prosciutto.
- Place the butternut on a baking paper-lined tray and bake with the chicken at 190ÂșC for 15-20 minutes or until the wedges are crisp and tender.
