Chicken In Gumbo Sauce

A gumbo is a spicy soupy stew from Louisiana.


  • 8 drumsticks
  • 2 tblsp oil
  • 1/2 red peppers diced
  • 2-3 stalks celery, diced
  • 1 large onion, peeled and diced
  • 2 tsp minced garlic
  • 400 can condensed tomato soup
  • 1/2 cup chicken stock or water
  • 2-3 tblsp chopped fresh thyme and basil or 1 tsp of each dried
  • 1/2 tsp each ground chilli, paprika and white pepper


  1. Brown the chicken legs in a hot, lidded frying pan.? Set aside.
  2. Add the pepper, celery and onion and garlic and brown quickly.
  3. Return the chicken to the pan with the tomato soup, stock or water, thyme and basil, chilli, paprika and pepper. Cover and simmer gently for 30 minutes.
  4. Serve the drumsticks with boiled white rice and your favourite vegetables.
