Provencale Casserole

These simple style casseroles are my favourites. Finish with plenty of fresh thyme or sage and lots of pepper.


  • 750grams Quality Mark Lamb Shoulder Chops or diced lamb shoulder
  • 2-3 tblsp oil
  • 2-3 stalks celery finely diced
  • 2 carrots, peeled and diced
  • 2 onions, peeled and diced (or use 1 leek)
  • 310 gram can cannellini beans
  • 1/2 tsp minced garlic
  • 3 cups beef stock
  • 150 grams smoked sausage diced (optional)
  • salt and pepper to season
  • chopped sage, thyme or parsley to season


  1. Brown the lamb or shoulder chops in the hot oil until well browned on all sides.? Transfer to a large casserole.
  2. Scatter over the celery, carrots, onions or leeks, drained beans, garlic and stock.? (Add the spicy sausage if using).
  3. Cover and cook at 160°C for 50 minutes until the meat and vegetables are tender.
  4. Season with salt and pepper and scatter over the herbs before serving.
  5. Accompany with garlic bread and winter greens if wished.
