Press mixture through a biscuit forcer to make a delightful shape.
Ingredients
- 250 grams butter, softened
- ½ cup icing sugar
- 1¾ cups pure flour
- ½ cup custard powder
- Custard-flavoured butter icing
- 1 quantity butter icing (see recipe on this website)
- 2 tablespoons custard powder
Method
- Preheat the oven to 180ºC. Lightly grease 1-2 baking trays or line with baking paper.
- In a medium-sized bowl, beat the butter and icing sugar together until light and creamy.
- Sift the flour and custard powder together and gently mix into the creamed ingredients. Do not over-mix as the biscuits will be tough.
- Roll teaspoonfuls into balls and place on the prepared trays. Dip the tines of a fork into flour and shake off any excess. Press the fork into balls of dough lightly to flatten a little.
- Bake in the preheated oven for 12-15 minutes until the edges are just beginning to turn pale brown. Cool on a cake rack.
- When cold, join two similar-sized cookies together with the custard-flavoured butter icing.
