Yo-yos

Press mixture through a biscuit forcer to make a delightful shape.

Ingredients

  • 250 grams butter, softened
  • ½ cup icing sugar
  • 1¾ cups pure flour
  • ½ cup custard powder
  • Custard-flavoured butter icing
  • 1 quantity butter icing (see recipe on this website)
  • 2 tablespoons custard powder

Method

  1. Preheat the oven to 180ºC. Lightly grease 1-2 baking trays or line with baking paper.
  2. In a medium-sized bowl, beat the butter and icing sugar together until light and creamy.
  3. Sift the flour and custard powder together and gently mix into the creamed ingredients. Do not over-mix as the biscuits will be tough.
  4. Roll teaspoonfuls into balls and place on the prepared trays. Dip the tines of a fork into flour and shake off any excess. Press the fork into balls of dough lightly to flatten a little.
  5. Bake in the preheated oven for 12-15 minutes until the edges are just beginning to turn pale brown. Cool on a cake rack.
  6. When cold, join two similar-sized cookies together with the custard-flavoured butter icing.
