This honey scented winter fruit salad is a perfect end to a warming winter dinner.
Ingredients
- 3 cups weak fruit tea
- 1/2 cup Manuka honey
- 1/2 Grannysmith apples, peeled and thickly sliced
- 1/2 pears, peeled and thickly sliced
- 1/2 cup each prunes, dried apricots, papaya and peaches
- grated rind of 1 orange
- 1/4 cup toasted slivered almonds
Method
- Combine the fruit tea and the honey in a medium sized pan and stir over the heat until the honey has dissolved.
- Add the fruit and poach uncovered for 15 minutes or until the fresh fruit is tender and the dried fruit plump. Leave to cool.
- Add the grated orange rind and toasted almonds before serving. Serve warm or cold with biscotti or amaretti and whipped cream , yoghurt or a specialty icecream.
Variation
- Use 2 cups of Early Grey Tea with one cup water in place of fruit tea.
