Watermelon and goat's cheese salad

Watermelon and goat's cheese may seem an odd combination but you will be a convert once you have tried this salad.


  • ½ large ripe watermelon
  • 200 grams goat's cheese
  • ½ cup green olives
  • ¼ cup toasted pinenuts
  • grated rind and juice of 3-4 large juicy limes


  1. Cut the watermelon into large wedges, discarding the rind. Cut into 1cm-thick slices, removing as many of the pips as possible.
  2. Finely slice goat's cheese. Arrange alternating layers of watermelon and goat's cheese on a platter or in a shallow bowl. Scatter over the olives, pinenuts and lime rind and squeeze over the fresh lime juice. Serve quickly after preparing.
