Ingredients
- 500 grams new potatoes, halved or quartered
- 2 large red onion, peeled and thickly sliced
- 6-8 whole cloves garlic, peeled
- 2-3 tblsp oil
- salt and pepper to season
- ½ cup freshly torn herb leaves (basil, oregano, parsley or chives)
- 3-4 spring onions, sliced
Method
- Toss the potatoes, onions, and garlic in the oil and season well with salt and pepper. Place on a foil-lined tray and bake at 200ºC for around 30 minutes until the potatoes are tender. Gently mix in the herbs and spring onions and serve.
