Warm Korma Chicken Salad

Exotic flavours!


  • 500 grams baby new potatoes
  • 1 sprig of mint
  • 1½ tblsp Korma curry paste
  • ½ cup unsweetened yoghurt
  • ¼ cup good ready-made mayonnaise
  • 1 lime, grated rind and juice
  • 1 medium-size ready-roasted chicken
  • 1 mango
  • 1 small red onion
  • 2-3 cups watercress or rocket


  1. Cook baby new potatoes with a sprig of mint in boiling salted water.
  2. Combine Korma curry paste, unsweetened yoghurt, mayonnaise and the grated rind and juice of the fresh lime. Mix well.
  3. Shred a warm chicken into bite-size pices, toss with the curry yoghurt dressing, then cover and set aside to marinate for a few minutes.
  4. Peel and slice ripe mango, finely slice the red onion and drain the cooked potatoes, then combine with the chicken and dressing. Season and serve with the watercress or rocket.
