Exotic flavours!
Ingredients
- 500 grams baby new potatoes
- 1 sprig of mint
- 1½ tblsp Korma curry paste
- ½ cup unsweetened yoghurt
- ¼ cup good ready-made mayonnaise
- 1 lime, grated rind and juice
- 1 medium-size ready-roasted chicken
- 1 mango
- 1 small red onion
- 2-3 cups watercress or rocket
Method
- Cook baby new potatoes with a sprig of mint in boiling salted water.
- Combine Korma curry paste, unsweetened yoghurt, mayonnaise and the grated rind and juice of the fresh lime. Mix well.
- Shred a warm chicken into bite-size pices, toss with the curry yoghurt dressing, then cover and set aside to marinate for a few minutes.
- Peel and slice ripe mango, finely slice the red onion and drain the cooked potatoes, then combine with the chicken and dressing. Season and serve with the watercress or rocket.
