
Delicious warm from the oven with steaming coffee for a late breakfast or even a light lunch.
Ingredients
- 1 batch Easy Croissant Dough
- 1 small leek, trimmed and finely sliced
- 2 slices good quality ham
- 100 grams gruyere, finely sliced
- beaten egg or milk to glaze
Method
- Have the croissant dough made up to point 5 as per the Easy Croissant Dough Recipe.
- Pan fry the leek with a small knob of butter until softened, about 1-2 minutes.
- Cut the croissant dough into 2 equal pieces and on a floured board, individually roll into 2 rectangles, 18cm x 30cm. Cut each rectangle into 3 triangles with 15cm bases. Reserve any trimmings.
- Cut the ham into long narrow triangles with a narrow 4-5cm base. Place the ham and cheese in the centre of each triangle and top with a little of the leek mixture. Roll up tightly from the base towards the point, which should sit nicely underneath the roll. Curve to make a crescent shape.
- Place on a greased baking tray, cover with a clean tea towel and leave to rise for 20-30 minutes or until double in bulk. Layer the trimmings, roll and fold to make 1-2 slightly less perfect croissants. Brush the croissants with beaten egg or milk to glaze.
- Bake at 200-210°C for 12-15 minutes or until golden and cooked through. Serve warm.
