Walnut Pate

  • Makes 2 cups
Walnut Pate

Perfect for a mezze platter. For a smoother pate, double the bread quantity and increase the oil until your reach the desired consistency.


  • 1 French stick
  • 1½ cups fresh or toasted walnuts
  • 50 grams feta cheese
  • 1 tsp ground cumin
  • 1 tsp minced fresh garlic
  • 1 tblsp sundried tomato paste
  • ¾ cup olive oil


  1. Tear the soft centre from the french stick and place in a food processor with the walnuts, feta cheese, cumin, garlic and tomato paste. Process until well chopped.
  2. With the motor running gradually pour down the olive oil until the mixture forms a thick paste. Season with salt and pepper.
