Walnut And Parsley Pesto

Ingredients

  • 2 cloves garlic, peeled
  • 1 1/2 cups walnuts, toasted
  • 1/2 cup firmly packed parsley leaves
  • 1/4 cup grated parmesan cheese
  • 1/2 cup light, fruity virgin olive oil

Method

  1. Put the garlic and walnuts into a food processor and process until finely chopped.
  2. Add the parsley and parmesan cheese, and with the motor running, gradually pour the olive oil down the feed tube until the mixture forms a thick paste.
  3. Bottle into sterilised jars and keep refrigerated.
