Vegetarian pasta with soy and ginger sauce

Ingredients

  • 3 cloves garlic, peeled and finely chopped
  • 1 stalk celery, finely sliced
  • ½ red and ½ green pepper, finely sliced
  • 1 carrot, peeled and finely sliced
  • 6 spring onions or 1 onion, finely sliced
  • 2 tablespoons oil
  • ¼ cup soy sauce
  • 2 tablespoons chopped fresh ginger or 1 teaspoon ground ginger
  • 2 tablespoons honey
  • ½ cup stock or water
  • ¼ cup sherry
  • 2 teaspoons cornflour
  • 1 cup bean sprouts
  • 250 cooked spaghetti or lasagne noodles

Method

  1. Heat the oil in a large pan or wok and cook the garlic, ginger, onions, peppers and carrots until the mixture is fragrant.
  2. Mix together the soy sauce, stock, sherry, honey and cornflour and pour the mixture into the pan.
  3. Cook until thickened. Add the pasta and bean sprouts and toss well. Serve garnished with toasted sesame seeds.
