Upside-Down Pizza

Eating out by the beach is part of summer every year we seek out new ideas to take in the picnic basket. This upside down pizza is a great idea for picnic fun this year.

Ingredients

  • baking paper
  • oil for brushing (olive is nice)
  • 4-5 anchovy fillets, halved lengthwise
  • about 16 olives (green or black)
  • ½ cup shredded fresh parmesan cheese
  • 8-10 cherry tomatoes, halved
  • 6 artichoke hearts in oil, well drained and thickly sliced
  • 8 slices of salami or shaved ham, roughly cut
  • 2 sheets pre-rolled puff pastry

Method

  1. Cut a 25cm circle of baking paper and place in the base of a 25cm spring-form cake tin. Brush lightly with oil.
  2. Loosely arrange sliced anchovy fillets, olives, parmesan cheese, cherry tomatoes, artichoke hearts and salami on top.
  3. Place the pastry sheets one on top of the other, on a lightly floured board and roll out together to make a 27cm circle.
  4. Cover filling with pastry, tucking the edges in and around the edge of the cake tin.
  5. Bake at 220°C for 15-18 minutes or until golden and well risen.
  6. Remove from oven and leave to set for a few minutes, before turning upside down on to a serving plate.
  7. Serve with fresh salad leaves and oregano.
