This recipe is courtesy of a Radio 3ZB listener in Christchurch.
Ingredients
- 1 cup raisins or sultanas
- 1/2 cup lemon peel
- 1/2 cup cherries
- 1/2 cup almonds
- 1/2 cup butter, softened
- 4 cups fine malt biscuit crumbs
- 2 tblsp honey
- 1 tsp coffee essence
- 1/2 tsp almond essence
- 1 tsp each nutmeg, cinnamon, mixed spices
Method
- Mix chopped fruit and nuts and spices. Cream butter, honey and essences till soft. Mix in the fruit. Stand for 2-3 hours in a cool place. Mix in the crumbs. Press into a lined tin and leave a couple of days. Ice and enjoy.
