Family favourite. Just change the herbs for winter or summer flavours.
Ingredients
- 500 grams lean pork mince
- ½ cup chopped fresh herbs or 1 tablespoons dried mixed herbs
- 1 onion, finely diced
- ½ cup fresh breadcrumbs
- ½ cup red wine or chicken stock
- 400 gram can chopped tomatoes in juice or 500 gram jar tomato pasta sauce
- 2 stalks celery, finely chopped
- 1 courgette, finely diced
- ½ teaspoon paprika
- fettuccini or spaghetti for 4
Method
- In a bowl mix together the mince, herbs, onion and bread. Roll into 24 balls.
- Brown the meatballs evenly in a dash of oil in a frying pan. Add the red wine or stock and simmer 5 minutes.
- Stir in the tomatoes, celery, courgettes and paprika. Cover and simmer for 20 minutes.
- Arrange pasta in warm pasta bowls and top with the meatballs and sauce. Garnish with grated parmesan cheese.
Cooks Tips
For fresh herbs try:
Winter – thyme, parsley, oregano and/or a little rosemary
Summer – basil, chives, parsley
