Ingredients
- 1 cup cooked turkey or chicken, finely diced
- ½ cup ham, finely diced
- ½ red pepper, finely chopped
- 1 tblsp Dijon mustard
- ¼ cup crème fraiche
- 2 tblsp finely chopped black olives
- 1 tblsp chopped fresh thyme leaves
- 1 tblsp chopped fresh parsley
- salt and pepper
- 30 sheets filo
- 100 grams butter, melted
Method
- Combine the cooked turkey, ham, red pepper, mustard, cr?me fraiche, olives, thyme and parsley, season with salt and pepper.
- Place one sheet of filo on a board, brush with butter and top with a second sheet.Fold lengthwise into thirds. Place a tablespoon mixture in the corner.
- Fold the filo strip over to form a triangle. Continue folding filo parcel in a triangular fashion, down the length of the filo, until you reach the end of the strip. Place the parcel on a greased tray and brush with butter. Repeat until all filling and filo have been used up.
- Bake at 200 degrees C for 10 to 12 minutes until golden and hot. Serve warm.
