Turkey Filo Nibbles

Turkey Filo Nibbles


  • 1 cup cooked turkey or chicken, finely diced
  • ½ cup ham, finely diced
  • ½ red pepper, finely chopped
  • 1 tblsp Dijon mustard
  • ¼ cup crème fraiche
  • 2 tblsp finely chopped black olives
  • 1 tblsp chopped fresh thyme leaves
  • 1 tblsp chopped fresh parsley
  • salt and pepper
  • 30 sheets filo
  • 100 grams butter, melted


  1. Combine the cooked turkey, ham, red pepper, mustard, cr?me fraiche, olives, thyme and parsley, season with salt and pepper.
  2. Place one sheet of filo on a board, brush with butter and top with a second sheet.Fold lengthwise into thirds. Place a tablespoon mixture in the corner.
  3. Fold the filo strip over to form a triangle. Continue folding filo parcel in a triangular fashion, down the length of the filo, until you reach the end of the strip. Place the parcel on a greased tray and brush with butter. Repeat until all filling and filo have been used up.
  4. Bake at 200 degrees C for 10 to 12 minutes until golden and hot. Serve warm.
