
Ingredients
- 600-700 grams cold cooked pickled pork
- 1 red or orange capsicum, sliced
- 1 green capsicum, sliced
- ½ fresh pineapple, cut into chunks
- 1 frilly-style lettuce, washed and torn into chunks
- 1 cup macadamia nuts, toasted
- 2-3 spring onions, sliced
- Piquant lemon 'n' chilli mayo
- 1 cup of your favourite mayonnaise
- 2 tablespoons finely chopped gherkins
- 2-3 tablespoons sweet chilli sauce
- 1-2 tablespoons finely choppped fresh chives
- grated rind and juice 1 lemon
Method
- Cut the pickled pork into chunky 2-3cm sized pieces and place in a bowl with the capsicums, pineapple, lettuce, macadamia nuts and spring onions.
- Toss with the piquant lemon 'n' chilli mayo and serve soon after dressing.

- Stir together the mayonnaise, gherkins, chilli sauce, chives and lemon rind and juice.
