Tropical pickled pork salad


  • 600-700 grams cold cooked pickled pork
  • 1 red or orange capsicum, sliced
  • 1 green capsicum, sliced
  • ½ fresh pineapple, cut into chunks
  • 1 frilly-style lettuce, washed and torn into chunks
  • 1 cup macadamia nuts, toasted
  • 2-3 spring onions, sliced
  • Piquant lemon 'n' chilli mayo
  • 1 cup of your favourite mayonnaise
  • 2 tablespoons finely chopped gherkins
  • 2-3 tablespoons sweet chilli sauce
  • 1-2 tablespoons finely choppped fresh chives
  • grated rind and juice 1 lemon


  1. Cut the pickled pork into chunky 2-3cm sized pieces and place in a bowl with the capsicums, pineapple, lettuce, macadamia nuts and spring onions.
  2. Toss with the piquant lemon 'n' chilli mayo and serve soon after dressing.
