Tropical Lemon Grass And Lime Fruit Salad

This fresh fruits salad with citrus overtones complements the Coconut Muesli. Use whatever fruits tropical style you can purchase. Other fruits that you could use in this salad included, kiwifruit, canned (well-drained) lychees and ripe or canned (well drained) pears.

Ingredients

  • 3 stems lemon grass
  • 1 1/2 cups water
  • 1/4 cup sugar
  • grated rind and juice 3 limes
  • 1 large paw paw
  • 1 small golden pineapple
  • 2-3 bananas
  • 2-3 mangos

Method

  1. Trim off the rough end of the lemon grass and crush the whole stem with the back of a knife. Place the lemon grass into a saucepan with the water, sugar lime juice and rind and stir over a low heat until the sugar dissolves. Simmer for 5 minutes then remove from the heat and allow to cool thoroughly so that the flavours can mingle. Strain.
  2. Prepare the fruit. Cut the paw paw in half and remove the seeds. Peel and dice or slice the flesh. Remove the thick skin of the pineapple, cut out the eyes and slice finely. Cut each slice into wedges. Peel and slice the bananas. Cut the mango down either side of the long flat stone. Hold the mango half in your hand and carefully cut the mango into long thin slices, without cutting through the skin. Carefully cut the slices away from the skin.
  3. Arrange the fruit in a shallow bowl and pour over the lemon grass and lime syrup. Cover and allow to stand for about 1 hour before serving. Alternatively prepare the night before and refrigerate. Remove from the fridge about 1 hour before serving so that it is not too cold.
