Tomato and chive whipped feta

Tomato and chive whipped feta

To serve with Parmesan Waffles

Ingredients

  • 200 grams feta
  • ΒΌ cup cream
  • 1 tablespoon finely chopped chives
  • 1 tablespoon sun-dried tomato pesto
  • 50-100 grams cold smoked salmon

Method

  1. Crumble the feta into a bowl and work with a wooden spoon until smooth. Stir in the cream, chives and pesto. Add more cream for a softer dip if wished. Place a small teaspoon on top of each waffle wedge, arrange a rolled up piece of salmon on top and garnish with fresh herbs or lemon rind if wished.

Cooks Tips

Variations - Use basil pesto instead of sun-dried tomato pesto and replace the smoked salmon with smoked tuna. - Use olive tapenade instead of sun-dried tomato pesto and replace the smoked salmon with salami.
