Tomato and cheese muffins

Tomato and cheese muffins


  • 3 cups flour
  • 1 teaspoon each salt and pepper
  • 2 tablespoons baking powder
  • 1¼ cups grated cheese
  • ¼ cup tomato paste (sundried or plain)
  • 2 eggs
  • 1½ cups milk
  • ½ cup yoghurt
  • ½ cup oil
  • ¼ cup each diced black olives and sundried tomatoes
  • ¼ cup chopped parsley or celery leaves


  1. Sift the flour, salt, pepper and baking powder into a bowl. Stir in one cup of the cheese.
  2. Mix together the tomato paste, eggs, milk yoghurt, oil, olives, sundried tomatoes, parsley or celery and fold into the dry ingredients.
  3. Divide evenly among 12 well-greased muffin tins and top each with a little of the remaining cheese.
  4. Bake at 200ºC for 18-20 minutes until golden and cooked. Serve hot.
