Tofu curry

Tofu curry


  • 500 grams firm tofu
  • 3-4 tablespoons Thai green curry paste
  • 1 tablespoon fish sauce
  • 400 gram can coconut cream
  • 2 tablespoons lime juice
  • 100 grams snow peas, trimmed and sliced diagonally
  • 100 grams green beans, trimmed and sliced diagonally
  • ¼-½ cup basil leaves


  1. Dice the tofu into 3cm cubes. Heat a dash of oil in a medium-sized pan. Brown tofu on all sides and set aside.
  2. Add the curry paste to the pan and fry for 1-2 minutes. Add the fish sauce, coconut cream and lime juice.
  3. Return tofu to the pan with the beans and snow peas. Simmer gently until the tofu is heated through and the vegetables are cooked.
  4. Serve the tofu with steamed rice and garnish with fresh basil leaves.

Cooks Tips

- In place of tofu you could use 500 grams boneless chicken thigh fillets, diced and browned. Cook for 15 minutes until tender before adding the vegetables.
