Ingredients
- 500 grams firm tofu
- 3-4 tablespoons Thai green curry paste
- 1 tablespoon fish sauce
- 400 gram can coconut cream
- 2 tablespoons lime juice
- 100 grams snow peas, trimmed and sliced diagonally
- 100 grams green beans, trimmed and sliced diagonally
- ¼-½ cup basil leaves
Method
- Dice the tofu into 3cm cubes. Heat a dash of oil in a medium-sized pan. Brown tofu on all sides and set aside.
- Add the curry paste to the pan and fry for 1-2 minutes. Add the fish sauce, coconut cream and lime juice.
- Return tofu to the pan with the beans and snow peas. Simmer gently until the tofu is heated through and the vegetables are cooked.
- Serve the tofu with steamed rice and garnish with fresh basil leaves.
Cooks Tips
- In place of tofu you could use 500 grams boneless chicken thigh fillets, diced and browned. Cook for 15 minutes until tender before adding the vegetables.
