Tofu And Onion Marmalade Spread

Tofu And Onion Marmalade Spread

Onions cooked until soft and glazed with sugar and spices are an ideal base for this tofu dip. Try it with crostini or with crudities.


  • 2 large onions, peeled
  • 1/4 cup olive oil
  • 1 tblsp minced fresh garlic
  • 1 orange (grated rind and juice)
  • 1/2 tsp ground coriander
  • 1/2 tsp mixed spice
  • 1/2 cup brown sugar
  • 250 grams soft tofu
  • salt and pepper to season


  1. Thinly slice the onions.
  2. Heat the oil in a large frying pan and add the onions and cook over a moderate heat for 15 minutes until the onions are soft.
  3. Add the garlic, orange rind and juice, coriander, mixed spice and brown sugar and cook a further 10 minutes until the mixture is thick. Cool.
  4. Puree half the cold onions with the tofu until smooth. Season with salt and pepper to taste. Place into a serving dish, cover and chill for 30 minutes before using.
  5. Serve the remaining onion marmalade on the side too.
