Tofu and basil curry

Tofu and basil curry


  • 500 grams firm tofu
  • 3-4 tablespoons Thai green curry paste
  • 1 tablespoon Asian fish sauce
  • 400 gram can coconut cream
  • 2 tablespoons lime juice
  • 100 grams green beans, trimmed and sliced diagonally
  • 100 grams snow peas, trimmed and sliced diagonally
  • ¼-½ cup fresh basil leaves to garnish


  1. Dice the tofu into 3-cm cubes. Heat a dash of oil in a medium-sized pan. Brown the tofu on all sides and set aside.
  2. Add the curry paste to the pan and fry for 1-2 minutes. Add the fish sauce, coconut cream and lime juice.
  3. Return the tofu to the pan with the beans and snow peas. Simmer gently until the tofu is heated through and the vegetables are cooked.
  4. Serve the tofu with steamed rice and garnished with basil leaves.
