This is made mainly from cupboard items and can be served cold or slightly warm.
Ingredients
- 500 gram packet pasta spirals
- 3 large ripe tomatoes
- 1 bunch spring onions
- 10 dried tomatoes in olive oil
- 1 cup finely sliced stuffed olives
- 2 cups diced cooked chicken pieces
- ¼ cup tomato paste
- ¼ cup olive oil
- 3 tablespoons wine or cider vinegar
- 3 tablespoons pesto
Method
- Cook the pasta in boiling salted water for about 10 minutes, until al dente. Drain and toss in 1 tablespoon of oil.
- Blanch, peel and dice the tomatoes. Trim and finely slice the spring onions. Slice the dried tomatoes finely.
- Blend the tomato paste, oil, vinegar and pesto.
- In a large bowl, toss together the pasta, the tomatoes and the dried tomatoes, onions, chicken and the dressing mix. Season with pepper and add some fresh basil leaves if wished.
