Three tomato pasta salad

This is made mainly from cupboard items and can be served cold or slightly warm.


  • 500 gram packet pasta spirals
  • 3 large ripe tomatoes
  • 1 bunch spring onions
  • 10 dried tomatoes in olive oil
  • 1 cup finely sliced stuffed olives
  • 2 cups diced cooked chicken pieces
  • ¼ cup tomato paste
  • ¼ cup olive oil
  • 3 tablespoons wine or cider vinegar
  • 3 tablespoons pesto


  1. Cook the pasta in boiling salted water for about 10 minutes, until al dente. Drain and toss in 1 tablespoon of oil.
  2. Blanch, peel and dice the tomatoes. Trim and finely slice the spring onions. Slice the dried tomatoes finely.
  3. Blend the tomato paste, oil, vinegar and pesto.
  4. In a large bowl, toss together the pasta, the tomatoes and the dried tomatoes, onions, chicken and the dressing mix. Season with pepper and add some fresh basil leaves if wished.
