The Classic Coleslaw

The original coleslaw was little more than cabbage and dressing, this one is very simple and can be varied by adding pears in place of apples, adding chopped herbs such as parsley or dill or using a savoy cabbage in place of the more traditional round or Drumhead cabbage.

Ingredients

  • ¼ cabbage, finely shredded
  • 2 carrots, scrubbed and grated
  • 1 apple, cored and finely sliced (Granny Smith)
  • ¼ cup finely chopped onion
  • ½ cup sultanas or raisins

Dressing

  • ½ cup mayonnaise
  • 2 tblsp cream
  • 2 tblsp lemon juice
  • 1 tsp dry mustard powder
  • ¼-½ tsp chilli powder

Method

  1. In a large bowl toss together the cabbage, carrots, apples, onion and sultanas or raisins
  2. Mix together all the dressing ingredients and toss through the cabbage mixture. Season with salt and pepper. Cover and stand for 10 minutes before serving.

Variation

  1. Add a teaspoonful or caraway or toasted cumin seeds for an interesting flavour burst.
