Thai Vegetable Salad With Lime Dressing

This salad is delicious served with my recipes for Thai Pork Burgers.

Ingredients

  • ½ x 400 gram can mango slices, well drained
  • 1 carrot, peeled and grated or julienne
  • ½ cucumber, halved and sliced
  • 2 spring onions, finely sliced
  • ½ cup roasted peanuts
  • ¼ cup chopped coriander, chives and or basil
  • 2 red chillies, deseeded and sliced
  • 2 tblsp finely shredded lemon grass

handfuls mixed salad greens

  • Lime Dressing
  • 2 tsp minced fresh ginger
  • 1 tsp minced fresh chilli
  • 1 tblsp caster or grated palm sugar
  • ½ lime, quartered, deseeded and chopped
  • 1½ tblsp Thai fish sauce
  • ¼ cup water

Method

Salad

  1. Cut half the mangoes into thin slices.
  2. Toss all the remaining ingredients together with the dressing. Serve soon after making.

Dressing

  1. Put all the ingredients into a mini food processor and process until well mixed.

Cooks Tips

When cooking with lemon grass, use the white party only. The long lemon grass stems can be used to make a tisane. Just place in a tea pot with boiling water and stand for 5 minutes.
