Thai-scented rice noodle salad

Ingredients

  • 125 grams rice noodles
  • 1 pawpaw, peeled and sliced
  • ½ red onion, sliced thinly
  • 125 grams shitake mushrooms, sliced
  • 125 grams enokitake mushrooms (optional)
  • 2-3 cups rocket leaves
  • 1 tblsp mint leaves or coriander, roughly chopped

large red chilli, deseeded and sliced

  • 2 tblsp fish sauce
  • ¼ cup lime juice
  • 2-3 tbslp palm sugar
  • 3 tblsp mint
  • 3 tblsp coriander

Method

  1. Pour boiling water over the rice noodles and allow to stand for 10 minutes before draining well.
  2. In a large bowl put the rice noodles, pawpaw, red onion, Shitake and Enokitake mushrooms (if using), rocket leaves and herbs. Mix together the dressing ingredients and gently toss into the salad.

Cooks Tips

- Shiitake Mushrooms have a lovely woodsy flavour with a meaty texture and distinct flavour. Remove the hard wooden stems before cooking.
