Thai Grilled Salmon With Crispy Noodle Salad

Ingredients

  • 2-3 spring onions, trimmed and sliced diagonally
  • 2 sticks celery, sliced diagonally
  • 1 telegraph cucumber, deseeded and sliced diagonally
  • 400 grams can mangoes, drained and sliced
  • 140 grams packet crispy noodles
  • 1½ tblsp each chopped fresh mint and coriander
  • 3 tblsp Thai fish sauce
  • ¼ cup fresh lime juice
  • 2 tsp caster sugar
  • 1 tsp grated fresh ginger
  • ½ tsp minced chilli paste
  • ½ tsp minced garlic
  • 1 tsp oil
  • 500 grams boneless salmon fillet

Method

  1. Combine ginger, chilli and garlic with the oil and spread over salmon. Marinate for 10 minutes.
  2. Fan grill at 180°C until just cooked. Cool. Break up into 3-4cm pieces.
  3. Combine spring onions, celery, cucumber, mango and crispy noodles. Toss with the dressing, pile salmon pieces on top. Serve.

Dressing

  1. Mix the ingredients together.
