Texas meatloaf

Texas meatloaf

Ingredients

  • 1 onion, peeled and finely chopped
  • 2 rashers bacon, diced
  • 500 grams lean beef mince
  • 1 cup cooked brown rice
  • 2 tablespoons chopped fresh parsley
  • 1 tablespoon Worcestershire sauce
  • 2 eggs
  • ½-1 cup grated cheese
  • Tangy BBQ Sauce
  • ½ onion, finely diced
  • 1 teaspoon minced garlic
  • ¾ cup tomato sauce
  • ½ cup water or red wine
  • 1 tablespoons wine or cider vinegar
  • 1 teaspoon prepared mustard
  • 1 teaspoon chopped fresh thyme

Method

  1. Preheat the oven to 190ºC. Line a baking tray with foil.
  2. Pan fry the onion and bacon until soft but not brown; cool.
  3. Mix together the onion and bacon mixture, beef mince, rice, parsley, Worcestershire sauce and eggs. Shape mixture into a large loaf and place on the prepared baking tray.
  4. Cook in the preheated oven for 40 minutes. Remove the meatloaf from the oven, sprinkle the cheese on top and return for a further 5-8 minutes or until the cheese has melted. Rest the meatloaf loaf for 10 minutes before serving in thick slices with the Tangy BBQ sauce.

  6. Cook the onion and garlic in a dash of oil in a saucepan for 5-7 minutes until soft and lightly brown. Add the tomato sauce, water or red wine, vinegar, mustard, thyme and simmer for 10 minutes. Serve cold. Makes: About 1 cup
