  • Makes 1 large flat loaf
Tear-away Pepper Bread

This quick idea designed for those people with a bread machine.

Ingredients

  • 1 basic dough recipe from your own machine’s recipe book
  • 2 tsp ground black pepper
  • 1 cup very finely grated parmesan cheese
  • 50-75 grams butter, melted
  • 1 tbsp poppy or sesame seeds

Method

  1. Place the ingredients for your basic recipe into the bread machine dough bowl adding the pepper as well.
  2. Set the machine for dough and after 10 minutes of kneading time add the parmesan cheese. Leave the dough to continue through its process until ready.
  3. Turn the dough out and knock back gently.
  4. Roll out on a floured board to a 40cm x 30cm rectangle and then cut into 3-4cm pieces in any shape you like.
  5. Brush or dip the pieces of dough lightly into the melted butter and place in a 20cm x 30cm slice tin, overlapping the pieces to fit. Sprinkle over the poppy or sesame seeds and over with the clean tea towel. Allow to rest for 30 minutes.
  6. Cook at 200ºC for 30-35 minutes until well risen and golden. You will be able to tear the pieces off easily to accompany your mezze platter.
