Ingredients

• 1 pawpaw, peeled and diced
• 1 honeydew melon, peeled and diced
• 1 large bunch grapes
• 1 punnet strawberries
• 2 mangoes or peaches
• 375ml bottle dessert wine
• 300ml bottle cream
• 70 gram packet ground almonds
• few drops almond essence

Method

1. Peel and dice pawpaw and melon, discarding seeds. Wash grapes and strawberries. Stone mangoes or peaches and slice.
2. Place fruit in a large bowl with the dessert wine and leave to macerate for 2 hours.
3. Whip cream until thick. Fold in the ground almonds and enough almond essence to give a nice flavour.
