Ingredients
- 750 grams pork mince
- 225 gram crushed pineapple, well-drained
- 1 onion, peeled and finely chopped
- 4-5 shiitake mushrooms, diced
- 3-4 spring onions, trimmed and finely chopped
- 1 tblsp minced fresh ginger
- 2 tblsp chopped fresh coriander
- 2 tblsp balsamic vinegar
- 4 slices fresh pineapple, quartered
Method
- Mix together the pork mince, pineapple, onion, shiitake mushrooms, spring onions, ginger, coriander and balsamic vinegar. Shape into about 8 equal-sized hamburgers.
- Barbecue on a well-oiled, preheated hot plate for about 10-12 minutes turning occasionally.
- While the burgers are cooking, grill the pineapple pieces so that they are hot and lightly browned.
- Serve the burgers on grilled buns, topped with rocket leaves and pieces of grilled pineapple. Accompany with the Sweet and Sour Soy Dipping Sauce
Sweet and Sour Soy Dipping Sauce
- Mix together 4 tblsp Indonesian soy sauce with the juice and grated rind one lime, about 1 tblsp grated palm sugar and 1 tsp each minced fresh ginger and chilli.
