Sweet, sharp and fruity, this is one of my favourite recipes, which I presented on Food in a Minute, to accompany a glazed ham.
Ingredients
- 500 gram selection of dried fruit (apricots, figs, prunes, apples)
- 3 firm ripe pears, peeled and thickly sliced
- ½ pineapple, skinned and sliced into wedges
- 565 gram can lycheese in syrup
- 1½ cups dry white wine
- 1 cup savoury apricot sauce
- ½ cup white wine vinegar
- ½ cup brown sugar
- ¼ cup wholegrain mustard
Method
- In a large saucepan, combine all ingredients, including lychee syrup and stir.
- Bring to the boil, then lower the heat and simmer, uncovered, over a gentle heat for 15 minutes or until the pears are tender.
- Cool a little before transferring to a dish. Serve warm or cold.
Cooks Tips
- If possible use a tropical gold pineapple, they are sweeter and less acidic. If using canned pineapple, drain off all the juice - use 1 large (800 gram) can of pineapple chunks. - To save time, prepare the sweet mustard fruits in advance. Keep in the fridge in an airtight container for up to a week. Suitable to freeze.
