Sweet and Sour Pork is a favourite kiwi dish, so glam it up using meaty pork chops or steaks with this quick cooking, no fuss baked version.
Ingredients
- 440 gram can crushed pineapple, undrained
- 1 tblsp brown sugar
- 1 tblsp cornflour
- 2 tblsp white vinegar
- 1-2 green chillies, deseeded and finely chopped
- 1 carrot, peeled and finely sliced
- 2 parsnips, peeled and finely sliced
- 2 spring onions, trimmed and sliced
- 4-6 pork chop steaks or pork steaks
Garnish
- 1-2 spring onions, trimmed and finely chopped
- ¼ cup chopped cashews
Method
- In a small saucepan combine the pineapple, brown sugar, cornflour, vinegar and chillies. Stir over a medium heat until thickened. Cool.
- Place the carrots, parsnips and spring onion in the bottom of an oven-proof dish.
- Place the pork on top of the prepared vegetables and pour over the sauce.
- Bake at 200°C for 25-30 minutes or until the pork is golden and tender and the vegetables tender. Scatter over the spring onion and cashews to serve.
