Sweet And Sour Apricots

This recipe is a great complement to Summer Meatloaf.

Ingredients

  • 2 tblsp tamarind
  • ¾ cup warm water
  • 1 long red chilli, deseeded and chopped finely
  • 1 tblsp finely sliced fresh ginger
  • 1 tsp minced garlic
  • ¼ cup brown sugar
  • 100 grams New Zealand dried apricots, halved

Method

  1. In a small bowl, rub the tamarind and water together until it forms a muddy pulp. Strain the liquid and set aside.
  2. Cook the chilli, ginger and garlic in a dash oil in a frying pan for about 2 minutes until very fragrant. Add the tamarind water, brown sugar and apricots and poach gently for 10 minutes or until the apricots have absorbed all the liquid. Serve cool.
