Sundried tomato focaccia

This quick idea makes a substantial nibble, ideal to have in front of the TV on a wet night watching the rugby.

Ingredients

  • ½ cup Mediterranean paste (see recipe under DIY pastes)
  • 1 loaf focaccia or ciabatta bread
  • ¼ cup grated Cheddar-style or Parmesan cheese

Method

  1. Brush the loaf with olive oil and spread the paste over the top. Scatter over the cheese. Grill under a moderate heat until the cheese has melted over the top and the bread is warm. Top with fresh basil leaves, if wished, and serve in wedges.
