Sumptuous French Toast

This is a wonderful twist on a classic French Breakfast.


  • 1 unsliced fruit loaf, preferably 1 day old
  • ½ cup raspberry jam
  • 410 gram can peach slices, well drained or 3-4 ripe juicy peaches, peeled and finely sliced
  • 4 eggs
  • ¼ cup milk
  • ¼ cup cream

To Accompany

  • cinnamon sugar
  • golden syrup
  • thick natural yoghurt


  1. Cut the loaf into 3 cm thick slices. Carefully, using a serrated knife cut a pocket in the side of each slice to form a pocket. Do not cut all the way through. Stuff each pocket with 2-3 teaspoons jam and 4-5 peach slices.
  2. Lightly beat the eggs, milk and cream together. Carefully dip each stuffed slice of bread into the egg mixture, turning once.
  3. Heat a little butter in a large fry pan until hot. Pan fry the slices, turning once. do not cook over a high heat as they will burn before the filling is heated through. Cut in half, dust with cinnamon sugar and serve with maple syrup and thick natural yogurt.

To Make Cinnamon Sugar

  1. Mix together 1 teaspoon ground cinnamon with 2-4 tablespoons caster sugar.

Cooks Tips

Any jam and fruit combination can be used for this recipe. For a savoury version, stuff the pockets with cheese and ham or smoked slamon and feta, or smoked chicken and cranberry sace and ham and a savoury type of bread.
