This recipe combines summer berries with a really easy-to-make creme. You can use Plums in Sweet Wine (see Lemon Cheesecake Icecream with Plums in Sweet Wine) in this dessert.
Ingredients
- 350 grams raspberries (free-flow frozen or fresh)
- ½ cup sugar
- 2 punnets strawberries
- 1 punnet blackberries or blueberries
- 4 tubs Fresh n Fruity Fromage Frais Strawberry Fruit Corners
- 300 mls mascarpone or creme fraiche
- sugar to taste, optional
Method
- Heat the raspberries and sugar in a saucepan or microwave, stirring occasionally until the sugar has dissolved and the fruit has become almost pulpy. Remove from the heat.
- Wash and hull the strawberries and cut into halves or quarters if large. Place the strawberries and blackberries or blueberries in a shallow container and pour over the hot berry mixture. Stir to mix. Cover and refrigerate for 2-3 hours until well chilled.
Fromage Frais Creme
- Blend together the fromage frais (leaving behind the fruit pulp or mixing it into the berry mixture) and cream. Sweetened if desired (though I find it sweet enough when served with the fruit).
- Chill until required. To serve, pile layers of berries and Fromage Frais Creme into tall glasses. If wished, decorate with fresh sweet herbs like mint or borage flours.
