Sweet strawberries and sharp prosciutto combine in this delicious salad.
Ingredients
- 60 grams thinly sliced prosciutto
- 3-4 cups mixed baby salad leaves
- 1 cup strawberries, hulled, cut into halves
- ¼ cup toasted pinenuts
- 50 grams Parmesan cheese, shaved
Balsamic Dressing
- 3 tblsp olive oil
- 2 tblsp balsamic vinegar
- ½ tsp Dijon mustard
Method
- Grill the prosciutto slices until crispy, taking care not to let them burn. Break into 3-4cm pieces.
- Toss the salad leaves, strawberries, pinenuts, prosciutto slices and shaved parmesan with balsamic dressing.
Dressing
- In a screw top container, shake the oil, balsamic vinegar and mustard with a seasoning of salt and pepper.
