
Wok cooking sugar snap peas is a great way to enjoy them. They remain crisp yet take on the fragrant Asian flavours with gusto. Use snow peas (mangetout) if you cannot obtain sugar snap peas.
Ingredients
- 2 cloves garlic, crushed, peeled and finely sliced
- 5 cm piece fresh ginger, peeled and finely sliced
- 250-300 grams sugar snap peas, trimmed
- 2 tblsp hoisin sauce
- dash dark soy sauce and dry sherry
- snow pea sprouts (optional)
Method
- Heat a good dash oil in a wok until very hot. Add the garlic, ginger and sugar snap peas and toss for about 2 minutes until the peas begin to brown a little and soften.
- Add the hoisin, soy sauce and sherry and season with salt, pepper and a pinch sugar. If wished add in a handful of snow pea sprouts and serve quickly.
