Stir-fried rice on cos lettuce

The most important factor in good fried rice is to have the rice cooked the day before.


  • 2 tablespoons oil
  • 250 grams green beans, trimmed and sliced
  • 3 cups cold cooked rice
  • 1-2 tablespoons light soy sauce
  • ½-1 tablespoon oyster sauce
  • 2-3 baby cos lettuces, leaves separated


  1. Heat the oil in a wok. When hot, stir-fry the green beans until crisp and tender. Scoop out, leaving any residual oil in the wok. Set the beans aside.
  2. Add the rice ot the wok and toss over a very high heat until the rice is hot. Return the beans to the pan with the soy sauce and oyster sauce and toss quickly to mix. Serve the rice steaming hot in cool, crisp cos lettuce leaves.
