Sticky Spare Ribs

Lamb spare ribs are an economical purchase, easy to cook and add a fun element to a family’s meal.

Ingredients

  • 1kg lamb spare ribs
  • 1/4 cup runny honey
  • 1/4 cup soy sauce
  • 1/2 cup hoi sin sauce
  • 1-2 teaspoons Chinese five spice powder
  • 1 tablespoon minced ginger

Method

  1. Mix together the honey, soy and hoi sin sauce, five spice powder and ginger. Pour into a sealable plastic bag add the lamb spare ribs, seal and toss to coat. Allow to marinate for one hour if possible.
  2. Turn the oven on to fan grill 200°C or 220°C without fan. Line a shallow baking dish or oven tray with two layers of foil.
  3. Drain off and reserve the marinade. Place the spare ribs on the prepared tray - making sure they are in one layer.
  4. Cook under the preheated grill for about 15-18 minutes, turning occasionally and at the same time brushing with the marinade until the spare ribs are well browned
  5. Alternatively barbecue over a moderate grill, brushing with the reserved marinade regularly.

Cooks Tips

In a hurry - marinate the spare ribs at room temperature for 30 minutes only – this will cut the marinating time.
