
Ingredients
- 410 gram can creamed corn
- 2 eggs, beaten
- 2 tablespoons oil
- ½ cup milk
- ½ cup flour
- 1 teaspoon baking powder
- 1 small onion, peeled and finely chopped, optional
Method
- In a wide bowl, stir together the corn, eggs, oil and milk. Sift the flour and baking powder over the wet ingredients and stir to make a thickish batter. Add the onion, if using.
- Heat a knob of butter in a frying pan and, when hot, add large spoonfuls of the mixture. Cook over a moderate heat for 3-4 minutes or until the bubbles appear on the top. Once this happens, flip the fritters over and cook the other side for the same time or until golden. Transfer to a plate and keep warm in a low-termperature oven while cooking the remaining mixture.
- Serve warm with your favourite toppings like grilled bacon, sliced tomatoes or avocados or with a favourite chutney or golden syrup.
