Ingredients
- 500 grams minced pork
- 1 tsp shrimp paste
- 1 tblsp tom yum guy paste
- 1 tsp minced fresh ginger
- 1 tsp minced fresh garlic
- 1 tblsp minced chilli
- 2 tblsps finely sliced lemon grass
- 2 tblsps chopped coriander
- 3 sliced spring onions
- 2 eggs
- 1 tblsp fish sauce
- 50 piece packet of small wonton wrappers
Method
- Put the minced pork in a food processor with the shrimp paste, tom yum guy paste, ginger, garlic, chilli, lemon grass, coriander, spring onion, eggs and fish sauce to season. Process until well mixed.
- Cut the wonton wrappers into 6cm rounds. You can use a standard glass as a cutter.
- Fill each round with one teaspoon of the pork mix and gather up the sides with your fingers to form a crinkly case. Tap each dumpling on the bench to even out the pork slightly. Repeat and place on a tray as you go. At this stage the dumplings may be frozen on a tray then packed into resealable bags for later use.
- To cook place dumplings place in a preheated bamboo steamer or a vegetable steamer. Steam over a medium heat for 7-8 minutes. If you have frozen the dumplings defrost in the refrigerator before cooking. Serve each topped with a little fresh coriander and accompany with soy sauce.
