Steamed Hot And Sour Pork Dumplings

Steamed Hot And Sour Pork Dumplings

Ingredients

  • 500 grams minced pork
  • 1 tsp shrimp paste
  • 1 tblsp tom yum guy paste
  • 1 tsp minced fresh ginger
  • 1 tsp minced fresh garlic
  • 1 tblsp minced chilli
  • 2 tblsps finely sliced lemon grass
  • 2 tblsps chopped coriander
  • 3 sliced spring onions
  • 2 eggs
  • 1 tblsp fish sauce
  • 50 piece packet of small wonton wrappers

Method

  1. Put the minced pork in a food processor with the shrimp paste, tom yum guy paste, ginger, garlic, chilli, lemon grass, coriander, spring onion, eggs and fish sauce to season. Process until well mixed.
  2. Cut the wonton wrappers into 6cm rounds. You can use a standard glass as a cutter.
  3. Fill each round with one teaspoon of the pork mix and gather up the sides with your fingers to form a crinkly case. Tap each dumpling on the bench to even out the pork slightly. Repeat and place on a tray as you go. At this stage the dumplings may be frozen on a tray then packed into resealable bags for later use.
  4. To cook place dumplings place in a preheated bamboo steamer or a vegetable steamer. Steam over a medium heat for 7-8 minutes. If you have frozen the dumplings defrost in the refrigerator before cooking. Serve each topped with a little fresh coriander and accompany with soy sauce.
