Vibrant peas are a spring delight.
Ingredients
- 500 grams prepared gnocchi
- 2 cups fresh peas
- 125 grams snow peas and/or thin asparagus, trimmed
- 75 grams butter
- 250 grams green prawns, shelled
- 2 tablespoons chopped fresh thyme leaves
- grated rind and juice 1 lemon
Method
- Blanch the peas, snow peas and asparagus in a saucepan of boiling water for 1-2 minutes. Drain well and set aside.
- Heat the butter in a non-stick frying pan. Add the prawns and cook for 2-3 minutes. Add the peas, snow peas, asparagus, thyme, lemon rind and juice and season well with salt and ground black pepper if wished.
- Bring a large saucepan of water to the boil and cook the gnocchi for 2-3 minutes or until they rise to the surface. Using a slotted spoon, transfer to a warmed serving dish. Pour over the lemon and thyme butter sauce and serve immediately.
Cooks Tips
- You can use fettuccine pasta in place of gnocchi. - Use lemon thyme for a refreshing spring taste to this dish.
