Spring onion and crab fritters

Crabmeat is delicate in flavour, so sweet spring onions are an ideal partner. These quick-to-make fritters are light in both taste and texture. To make them even lighter, separate the eggs and whisk the egg whites until they form soft peaks, then carefully stir in with all the other ingredients.

Ingredients

  • 250 grams fresh crabmeat
  • 1 medium starchy potato, peeled, grated and squeezed
  • 4-6 spring onions, trimmed and finely sliced
  • 1 tablespoon chopped fresh chives
  • 2 teaspoons horseradish sauce
  • ¼ cup cream
  • 2 eggs, lightly beaten
  • ¼ cup self-raising flour
  • oil or butter, for cooking

Method

  1. Place all the ingredients, except oil or butter, in a bowl and stir very gently to combine.
  2. Heat a little oil or butter in a non-stick frying pan and cook large spoonfuls of the mixture over a moderate heat for 2-3 minutes on each side until golden and cooked through. Serve with your favourite salad and accompany with a lemon rind-spiked mayonnaise.

Cooks Tips

- If you can't find crabmeat, use well-drained canned crabmeat.

- These fritters are delicious served sprinkled with crispy fried shallots or onions as a garnish.
